  • 240 g potatoes ratte variety or other waxy new potato), diced
  • 120 g spring leeks, cut into 5-cm pieces
  • 120 g sweetcorn kernels
  • 1 tablespoon olive oil, divided
  • 1 tablespoon sherry vinegar
  • Mixed green salad
  • 40 g parmesan shavings
  • Salt and pepper


Mix the potatoes and the leeks. Put them on the cooking tray.

Cook for 15 minutes with the main dish and the dessert.

When cooked, season the leeks and potatoes with salt, pepper, half the olive oil and the sherry vinegar. Season the mixed green salad with salt, pepper and the remaining olive oil. On plates, top the potato and leek mixture with the mixed green salad. Sprinkle with sweetcorn and parmesan shavings.
