  • 3 red peppers, deseed & cut in quarters
  • 1 onion, sliced
  • 3 cloves garlic, peeled
  • ¼ cucumber, peeled
  • 4 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 400 ml tomato passata or sauce
  • Tabasco sauce
  • 100 g wholemeal bread, toasted and cut into small dice
  • 10 coriander leaves
  • Ice cubes
  • Salt and pepper


Put the peppers, onions and garlic in the steam basket.

Cook for 15 minutes with the main dish and the dessert.

With a food processor or blender, blend the steamed vegetables, the remaining ingredients, 10 coriander leaves and the ice cubes until smooth. Adjust the seasoning. Serve very cold. Decorate with the remaining coriander leaves and sprinkle with the wholemeal croutons.
