  • 16 small sole fillets (300 g)
  • 2 tablespoons tapenade or black or green olive purée
  • 16 wooden cocktail sticks
  • 400 g green courgettes, cut in strips, chilled.
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil, finely chopped
  • 4 thick slices wholemeal or rye bread, toasted
  • 1 or 2 garlic cloves, peeled, according to your taste
  • Salt and coarsely ground black peppercorns


Season the sole fillets and spread with tapenade. Roll up each one and secure with a cocktail. Place in the steam basket.

Steam for 15 minutes with the starter and the dessert. Meanwhile, mix the previously prepared courgette spaghetti with the olive oil, basil, salt and pepper.

Rub the toast with garlic, top with the seasoned courgette spaghetti and sole fillets.
