Pre-heat the oven to 180°C.
Sieve the flour and baking powder together.
Beat the fat and sugar together until light and fluffy.
Gradually mix in the egg and vanilla extract.
Mix in the flour.
Spoon into the moulds.
Bake for about 20 – 25 minutes or until firm to the touch.
It is traditionnal for the cakes to split along the top. Leave to cool completely.
Turn out and serve at snack time.
You can add the zest and juice of ½ orange or lemon to the mixture.
