Pour the water and sugar into a saucepan and boil for 20 minutes. Add the Malibu®, mix together and set the syrup aside. Peel a pineapple, remove the centre and cut the flesh into small cubes.
In a saucepan, stir the pineapple with the butter for 5 minutes on high heat. Then add the sugar and the grated coconut. Lower the heat and simmer for 5 minutes
Pour the syrup over the pancakes. Then add the compote over 4 pancakes. Make the pancakes 2 at a time. Cook them in the appliance for 5 minutes. Before serving, pour over the remaining syrup and sprinkle with grated coconut.
