Salmon with Creamy Mint Sauce

Ingredients

- 200g (7 oz) salmon

Creamy mint sauce (for 4 people):
- 1 egg yolk
- 150 ml (5 fl oz) natural fromage frais
- about 1 tbsp finely chopped fresh mint
- 1 glass of fish stock
- salt, pepper

  Cook the salmon for about 6 minutes on each side, gently turning over with a spatula.

Prepare the sauce by mixing together all the ingredients.

Then heat until just boiling.
