Medaillons of Monkfish with Shallots

Ingredients
- 500g (1 1/4 lb) fillet of monkfish
- 3 shallots
- 50g (2 oz) of butter
- Salt and pepper
 

Cut the monkfish into medaillons.
Chop the shallots.
Season the medaillons, roll them in the chopped shallots.

Put the medaillons on the grid of the bowl equipped with a clip-on handle and steam for 8 mins.

Serve as soon as they are cooked with a little melted butter to preserve the subtle taste of the shallots.
