Crab Terrine with Foie Gras

Ingredients

- 250g (10oz) crab meat (canned or frozen)
- 50g (2oz) mousse de foie gras
- 2 eggs
- 15ml (3 tsp) cream
- 2 tblsp bisque of lobster
- Salt - Pepper

 

Drain off the crab meat. Remove the cartilage.
Mix the mousse de foie gras with the cream and the bisque.

Add the eggs. Mix again for 1 min. Mix in the crab meat.

Pour into 4 buttered ramekin dishes.

Cover with cling film and cook in the steaming bowl for 18 mins.

Allow to cool for at least 2 hours before



Serve with mixed green salad.
