Apricot Meringue Pie
       very easy inexpensive

Ingredients

- Tinned or fresh apricots
- 100 ml single cream (7 tblsp) 
- 2 eggs
- 30 g (1 oz) sugar  + 50 g (1.7 oz)
- 30 g (1 oz) ground almonds
- Short pastry

  Roll the pastry and spread into dish. Prick pastry. Arrange apricot halves (skin side against pastry).

Beat yolks, cream, sugar, ground almonds and pour onto apricots.

Beat egg whites until firm with 50g of sugar and pour onto apricots, spreading it with a fork.

Cook for about 16 min at 240°C (460°F).
